Chewey morsels of cranberries and white chocolate with a whisper of orange and dusted with a buttery sugar streusel
1 tub CRANBERRY CHIPPERS Cookie Mix
1 ½ sticks softened butter (12 Tablespoons)
2 large eggs
2 cups fresh cranberries
½ medium-size orange
¼ cup sugar
or
¾ can whole berry cranberry sauce
2 Tablespoons grated orange peel
Streusel:
1 cup flour
¼ cup sugar
4 Tablespoons cold butter –cubed
Preheat oven to 350 degrees
Prepare streusel:
Combine flour, sugar and cold butter, using a pastry blender or fingers untilo
mixture is crumbly. Set aside.
Blend cookie mix softened butter and eggs, using 1 to 2 Tablespoons of water,
if necessary for mixing. Pat into a 9 x 11 inch greased pan.
Bake for 18 minutes.
Meanwhile blend fresh cranberries, orange and sugar in a blender or processor
until finely chopped – almost pureed. Spread over baked cookie crust as
soon as it is removed from oven. Sprinkle with the prepared streusel and bake
for 15 more minutes. Cool completely before cutting into bars.
